Indian Lime Pickle (Uncooked)
Makes approx. 1 ½ cups
Preparation time: 20 mins
Using Thermomix / Thermochef / Blender
Standing time after mixing: 1-2 weeks
6 Limes – cut up roughly
Cardamom from 4 pods
Cinnamon Stick – approx. 5cm
12 whole Cloves
1 teasp Salt
6 tablesp Lime Juice
Handful of organic raisins to soak up the juice and offer that sweet/sour contrast
Pinch of Chilli Powder
Pulse in a blender/TM or TC until well mixed and lime skins are chopped smaller.
Bottle in sterilised jars and keep in a wam place for 1-2 weeks until skins are tender.
